The Sleigh restaurant at the Holden Vale offers a modern and contemporary style dining room, with awards to its name and an excellent reputation for inspired and imaginative menus. The dedicated chefs prepare wonderful combinations of culinary dishes using only fresh local produce, complemented by a comprehensive wine list. CHEESE SELECTION
 
Trotter Hill Tasty Lancashire
Made by the Butlers family at Inglewhite near Beacon Fell. The cheese is made from local milk drawn from pastures between the rivers Ribble and Lune. The curds are ripened naturally, and then matured for up to 12 months. This is a proper tasty Lancs, each cheese is cloth bound in the traditional method.
 
Devon Blue
Made by Robin Congdon, Totnes Devon. High above the Dart Valley, Robin makes this raw milk cheese in a continental fashion. A blue cows milk cheese matured for a minimum of four months
 
Pont L'Eveque
AOC Normandy Region. Countless pastures and numerous streams dominate this undulating region with its mild and humid climate. It is the quality of these pastures allied to careful breeding of traditional cattle that gives the regions cheeses their special character. Pont L'Eveque is a typical tangy cheese, dating back to the previous millennium. Its smooth and generous texture develops to a full aroma during the ripening period.
 
Miss Muffet Cornish
Made by Sue Proudfoot, Whalesborough Farm Nr Bude, North Cornwall. Think of Atlantic waves crashing on the beach at Widemouth Bay where Sue farms 550 acres. One of Britain's exiting new cheese makers, using only Aryshire milk from a neighbour's farm overlooking the village of Boscastle, devastated by the floods in August 04. Miss Muffet is a washed curd cheese, beautiful creamy like a postcard from the country. Matured for 12 weeks.
 
Cherrywood
Originally made by the late James Aldrige, Godstone, Surrey. James recipe for this raw milk cheddar is still used at the Traditional Cheese Dairy in Kent, the cheese is then oak smoked using oak chippings from the local furniture maker for 3 days. The cheese is then matured a further 3 months.

Elysium Black Muscat wine is magenta in colour, provocatively rose perfumed with deep layers of flavour. It is good with blue cheese.
